Parish: Busted?


So, Concentrics restaurant group's newest addition, Parish, is one of the city's newest "hot spots," and has gotten written up everywhere. One of the restaurant's biggest selling points is its "eco-friendly" practices, of which there are many, and I'm very happy about. For instance, they use potato-based, biodegradable to-go silverware, and their patio umbrellas actually collect rain. They also use many organic ingredients, and lovingly restored the space, and it looks great.

My only question is why they serve their bread in paper? It just seems contradictory to their message, and I don't know if there's a reason. Is it a blatant mistake or a calculated decision? I'd love to find out about this one!

We are so glad to hear you are a fan of Parish and our eco-practices!

In regards to your question, I would like to give some insight into this decision.

We try to use as little waste as possible while keeping the foods in great condition. Recycled paper with a soy based lining is used in the market so customers' take out and delivery can travel well. We experimented with a variety of options for the market and the bread and this was the best solution that allowed the food to remain warm, put together and fresh...while also remaining eco-friendly.

Any materials we must use, including the paper, are eco-friendly. As you mentioned, our to-go forks, spoons, and knives are made from corn and are compostable within 30 days of hitting the landfill. For our to-go containers they are either made of corn or of sugargane and are compostable as well. Our cold to-go cups are made from corn and our hot to-go cups are made from partially recycled paper lined with corn (not petroleum).

It has been a great learning experience with Parish as this was a project which gave us the opportunity to truly delve into "being green" and we are excited to take this model and implement it as much as possible throughout!
